- 1 lb. of rainbow twirl pasta (made from vegetables) or whole grain twirl pasta
- 2½ cups of broccoli, chopped
- 2 Tbsp. light butter
- 1 Tbsp. olive oil
- 1 small white onion, finely chopped
- 3 Tbsp. flour
- ½ tsp. cayenne pepper
- 1 tsp. black pepper
- 1 tsp. paprika
- 3 cups 2% reduced fat milk
- 1 cup 100% natural chicken broth
- 4 cups low-fat shredded cheddar
- 1 Tbsp. spicy mustard
- Cook pasta and add broccoli the last 3 minutes to water.
- To make the sauce, in a skillet, add butter, olive oil, and onion sauteing on medium-high.
- Whisk in flour and seasoning and cook 1 minute.
- Add milk and chicken broth, whisk smooth.
- Bring skillet to boil, then turn down heat.
- Stir in mustard and cheese, allowing to melt.
- When pasta and broccoli are done, drain them and mix with sauce.
- 2 slices of Applewood Smoked Bacon, diced and fried.
- ½ white onion chopped and cooked with the bacon.
- 1 can butter beans, drained
- 1 can kidney beans, drained
- 1 box 100% Natural Chicken Broth
- ½ tsp. oregano
- ½ tsp. salt
- ½ tsp. pepper
- Cook the bacon and onions.
- Toss all ingredients together and heat in a pot.
- Enjoy!
- -If you don't like the texture of bacon in soup, don't cut the bacon up so you can remove it easily when the soup is done cooking. This will still give you the desired taste.
- 8 bell peppers (I prefer orange and yellow.)
- 2 Tbsp. olive oil, divided
- 1 medium onion - chopped
- 4 garlic cloves, minced
- 1 tsp. salt
- 1 tsp. black pepper
- 1 Tbsp. ground cumin
- 2 Tbsp. chili powder
- 16 oz. ground turkey
- 16 oz. chunky salsa (I like using HOT.)
- 2 cups fresh spinach - chopped
- 1 cup brown rice - cooked
- 1 cup low-fat cheddar cheese
- Fresh basil - Shredded
- Preheat your oven to 375 degrees Farenheit
- Cook rice.
- Slice bell peppers in half from stem to the bottom, without removing the stem.
- Remove the seeds from the peppers.
- Place bell pepper halves on a baking pan and drizzle the insides with olive oil.
- Cover the pan and bake for 15 to 20 minutes.
- Heat 1 Tbsp. of olive oil in pan over medium-high and saute onions, garlic, cumin, cili powder, pepper, and salt.
- After 3 minutes of sauteing, add turkey meat and cook for 5 minutes.
- Add salsa and spinach and cook for an additional 5 minutes.
- Combine the meat mixture with the cooked brown rice.
- Fill peppers.
- Cover the peppers with foil and bake for 25 minutes.
- Remove foil and sprinkle with cheese.
- Bake for an additional 10 minutes, or until the cheese is melted.
- Top with shredded basil and enjoy!
- 1 Can Black Beans
- 1 Small Can Green Chiles
- 1 Garlic Clove, minced
- Low-Fat Shredded Cheese
- 8 Tortillas
- Preheat oven to 35 degrees Fahrenheit.
- Drain the can of black beans.
- Combine black beans, green chiles, and garlic in a bowl.
- Mix the beans, chiles, and garlic together.
- Spray a baking sheet with non-stick cooking spray.
- Place a tortilla on the pan.
- Add about two spoonfuls of black bean mixture and sprinkle cheese on top.
- Roll the burrito up.
- Continue until you have 8 burritos on the pan.
- Bake the burritos 10 to 15 minutes.
- 3 bell peppers
- 1 medium yellow onion
- 1½ lbs chicken breast (Washed off and fat removed.)
- ½ cup chicken broth
- 1½ Tbsp chili powder
- 2 Tbsp cumin
- ½ tsp salt
- lime juice
- tortillas
- low-fat shredded cheese
- hot sauce
- Slice veggies.
- Place veggies at the bottom of your crockpot.
- Add chicken breast.
- Add chicken broth.
- Sprinkle on seasoning to cover the top of the chicken.
- Squart lime juice on top.
- Cook on low 8 hours or on high 4 to 6 hours.
- Shred meat.
- Place chicken and veggies in tortilla, sprinkle on cheese, and add some hot sauce.
- Enjoy your budget friendly and healthy chicken fajitas.
- 5 green apples
- 4 cinnamon sticks
- 1 cup honey
- 10 stevia packets
- 10 Tbsp ground cinnamon
- 5 tsp allspice
- 1 tsp nutmeg
- Water
- Peel the apples (unless you don't mind removing the loose skin later).
- Chop apples.
- Combine all dry ingredients in the crockpot.
- Fill crockpot with water.
- Cook on high for 5 hours.
- Leave apple cider in crockpot and place remaining apples and cinnamon sticks in a bowl.
- Throw out the cinnamon sticks.
- Mash apples and drain as much juice back into the cider.
- Let the apple sauce cool in the fridge.
- Enjoy your sugar-free apple cider and apple sauce!
- 15oz can of 100% pumpkin
- 1 box of yellow cake mix
- 2 Tbs cinnamon
- 1 tsp nutmeg
- 2 Tbs allspice
- Muffin pan to make 12 muffins
- Combine all ingredients.
- Mix well.
- Spray muffin pan with non-stick spray and fill all 12 compartments evenly.
- Bake using cake mix instructions.
- Enjoy your Pumpkin Spiced Muffins! They are good cold or heated for breakfast or a snack.
- Clean out your closet every couple of months. Donate or sale clothes that don’t fit or you never wear.
- Get rid of cookware, utensils, and dishes that you don’t use, are peeling, or you have more than needed. (I got rid of skillets that teflon was beginning to scrape off, removed extra pots and pans since I only have three burners, and only kept enough dishes for my husband and I and up to six guests to use.)
- Put DVDs inside CD carrying cases.


- Only keep magazine articles or recipes you will use, instead of the entire magazine, and file them away.
- Don’t buy extra bathroom products, use what you have first.
- Use wire baskets for extra storage in the kitchen, bathroom, and office (a wine glass hanger below a cabinet is perfect to hold napkins).
- Use a standing spice rack instead of filling up your cabinets with spices. Remove the spices you don’t want and replace them with ones you do. Use a label maker to rename the containers or paint a new label on.

- Only buy groceries you will be using that week.
- Use storage above your toilet so you can declutter your counter tops.
- Put things away when you are through using them.
- Use storage for things you normally wouldn’t put there. (I have photo albums and pictures in place of a tv in my bedroom and dishes in my entertainment center.)
- 1 Quart Water
- ⅓ cup sugar or 8 packets of Stevia
- ¼ tsp salt
- 6 squirts of liquid flavoring (use those with vitamin B and electrolytes added) or ⅓ package of sugar-free kool aid (use this if you aren’t needing the drink for health benefits)
- Combine all ingredients, except water into 1 quart mason jar.
- Fill the jar half full with water, close lid securely, and shake.
- Finish filling the jar with water and mix contents again.
- Refrigerate and enjoy.
- Asparagus Bundle
- 2 Tbs Olive Oil
- ½ to 1 Lemon Juiced
- 1 Tsp Sea Salt
- 1 Tsp Black Pepper
- 1 Garlic Clove Chopped
- 1 Tbs Shredded Parmesan
- Combine all ingredients, except parmesan into sealable bowl.
- Mix contents together.
- Place lid on bowl and let marinate for 30 minutes, shaking every 5 minutes.
- Heat flat grill or pan to 350 F
- Lay asparagus on flat grill or frying pan.
- Pour marinade over asparagus.
- Cook on each side for 5 minutes.
- After flipping asparagus sprinkle parmesan on top.
- Cook until done (Should be able to bend the asparagus easily but the outside should have a little crispness.)
- Enjoy!
Broccoli Mac and Cheese

I am the type of person that could eat macaroni and cheese every day. I love it! To help satisfy this craving I needed to make it a little healthier- the solution: broccoli mac and cheese. This recipe allows for that creamy, cheesy satisfaction, while adding additional nutrients and kick of flavor.

Bean and Bacon Soup

My husband just loves bacon, I really only want it with breakfast and not added to any foods, but I decided to make something both of us would like. My choice was bean and bacon soup. I love beans and their health benefits and know bacon is added to many bean dishes, so this would make a good combination.

Since I couldn’t find some of the ingredients and a few others I just didn’t want to add, I created my version of it. I love making these healthy stuffed peppers since one batch makes 16 halves and the leftovers can be frozen.

What man doesn’t love fajitas? It seems like most men I go to a Mexican restaurant and order fajitas, despite the higher cost. To help satisfy my husband’s fajita craving, without busting our budget I created a delicious crockpot chicken fajita recipe. I’ve never ordered fajitas at a restaurant, but I find myself adding chicken fajitas to our menu more frequently, which also gives me an excuss to make my quick hot sauce.

Homemade Sports Drink on a Budget

My husband works outside in the heat for 10 to 12 hours a day; part of their safety regulations is that they not only drink water but also drink some type of sports drink to get their electrolytes and salt replenished. It is easy to get sick if don’t replenish these vitamins and minerals due to all the sweating. However, the cost of these drinks can be outrageous and don’t usually fit into our budget due to buying a case or two a week. I started making homemade sports drinks that incorporate the nutritional aspects needed, but for the price of pennies. This homemade sports drink is an easy way to keep different flavored beverages handy and to meet the needs of different family members.

I love asparagus. My husband and I eat it at least once a week, but the traditional garlic butter flavor can get tiring. So I came up with a tasty and nutritious grilled lemon parmesan asparagus!
