Black Bean and Cheese Burritos

by Krista Davis on October 4, 2012

I love Mexican food, but it isn’t always the healthiest or the most budget friendly, so I created a black bean and cheese burrito recipe that is easy and healthier than using refried beans. Each burrito only costs around $0.40 to make.

Black Bean and Cheese Burritos
Recipe type: ntrée
Serves: 8
  • 1 Can Black Beans
  • 1 Small Can Green Chiles
  • 1 Garlic Clove, minced
  • Low-Fat Shredded Cheese
  • 8 Tortillas
  1. Preheat oven to 35 degrees Fahrenheit.
  2. Drain the can of black beans.
  3. Combine black beans, green chiles, and garlic in a bowl.
  4. Mix the beans, chiles, and garlic together.
  5. Spray a baking sheet with non-stick cooking spray.
  6. Place a tortilla on the pan.
  7. Add about two spoonfuls of black bean mixture and sprinkle cheese on top.
  8. Roll the burrito up.
  9. Continue until you have 8 burritos on the pan.
  10. Bake the burritos 10 to 15 minutes.
