Pumpkin Spice Muffins

As the temperature drops I start craving my favorite fall flavors, pumpkin, cinnamon, and nutmeg. I needed a way to satisfy craving while still maintaining healthy eating habits. I came up with some delicious pumpkin spice muffins.

Pumpkin Spice Muffins

Serves: 12
Healthy fall muffins.
  • 15oz can of 100% pumpkin
  • 1 box of yellow cake mix
  • 2 Tbs cinnamon
  • 1 tsp nutmeg
  • 2 Tbs allspice
  • Muffin pan to make 12 muffins
  1. Combine all ingredients.
  2. Mix well.
  3. Spray muffin pan with non-stick spray and fill all 12 compartments evenly.
  4. Bake using cake mix instructions.
  5. Enjoy your Pumpkin Spiced Muffins! They are good cold or heated for breakfast or a snack.

pillsbury makes a sugar free yellow cake mix, do you think that it would be a good substitute to help w/ sugar and sat fat grams

Yes! Any yellow cake mix should work. Where I live I only have a few options, so I used the nutrition based off of that.

Thanks. I like them. I actually took some extras out of the freezer and I’m eating one right now.
