Homemade Peanut Butter (sweet and creamy)
Author:
Serves: 16 oz.

A healthy 16 oz. jar of peanut butter that is sweet and creamy for around $1.
Ingredients
  • 1 lb./ 2½ cups unsalted peanuts (I prefer roasted.)
  • 3 Tbs. oil (grapeseed, olive, or sunflower oil)
  • 3 Tbs. honey
Instructions
  1. Remove the peanut shells (I like to crack them open in a bowl with a meat cleaver.)
  2. Place all ingredients in a high-speed blender. (I recommend the Vitamix.)
  3. With the cover on and tamper in place, slowly increase the speed of the blender until it is at its highest setting.
  4. Using the tamper press down and back and forth until all peanuts are mixed.
  5. Turn off the blender.
  6. Using a spoon scoop the homemade peanut butter into a clean container (an old peanut butter jar).
  7. This will be good for around 5 months.
Notes
Measure the oil before the honey, allowing the honey to not stick to the measuring spoon. When scooping out the peanut butter from the blender, tilt the blender at an angle so when you scrape the bottom it falls into one corner, instead of staying next to the blades.
