Cheesy Mexican Skillet

A healthy one-dish Mexican recipe that is wonderful for Meatless Mondays.
Ingredients
  • 1 cup onion, chopped
  • 4 tsp. chili powder
  • 1 tsp garlic powder
  • 1 can kidney beans, drained
  • 1 cup low-fat shredded cheddar
  • 2 eggs, beaten
  • 1 Tbsp. olive oil
  • 2 tsp. ground cumin
  • ¼ tsp. salt
  • 1½ cups brown rice, cooked
  • ¾ cup milk
Instructions
  1. Cook brown rice.
  2. Preheat oven o 350 degrees Farenheit.
  3. Saute onion in olive oil on medium.
  4. Stir in cumin, chili powder, garlic power, and salt and cook for 1 minute.
  5. Add beans, cooked rice, cheese, milk, and eggs (in that order) and mix.
  6. Place cast-iron skillet in oven and bake for 25 minutes or until the center sets.
  7. Serve with hot sauce.
Notes
