Healthy Stuffed Peppers

A healthy stuffed pepper that is great on a budget.
Ingredients
  • 8 bell peppers (I prefer orange and yellow.)
  • 2 Tbsp. olive oil, divided
  • 1 medium onion - chopped
  • 4 garlic cloves, minced
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 Tbsp. ground cumin
  • 2 Tbsp. chili powder
  • 16 oz. ground turkey
  • 16 oz. chunky salsa (I like using HOT.)
  • 2 cups fresh spinach - chopped
  • 1 cup brown rice - cooked
  • 1 cup low-fat cheddar cheese
  • Fresh basil - Shredded
Instructions
  1. Preheat your oven to 375 degrees Farenheit
  2. Cook rice.
  3. Slice bell peppers in half from stem to the bottom, without removing the stem.
  4. Remove the seeds from the peppers.
  5. Place bell pepper halves on a baking pan and drizzle the insides with olive oil.
  6. Cover the pan and bake for 15 to 20 minutes.
  7. Heat 1 Tbsp. of olive oil in pan over medium-high and saute onions, garlic, cumin, cili powder, pepper, and salt.
  8. After 3 minutes of sauteing, add turkey meat and cook for 5 minutes.
  9. Add salsa and spinach and cook for an additional 5 minutes.
  10. Combine the meat mixture with the cooked brown rice.
  11. Fill peppers.
  12. Cover the peppers with foil and bake for 25 minutes.
  13. Remove foil and sprinkle with cheese.
  14. Bake for an additional 10 minutes, or until the cheese is melted.
  15. Top with shredded basil and enjoy!
Notes
You can freeze your peppers after your meat and rice mixture has been added. When you want to eat them, just defrost then bake for 25 minutes, and follwo the steps adding cheese and basil.
