Easy Mexican Cornbread

by Rhonda Wylie on June 10, 2014

Cornbread is a tradition in the south, especially with a good pot of homemade pinto beans. Okay, so it may not be the most healthy food, but it’s SO GOOD! Today I wanted to share with you one of my family’s favorites – Mexican Cornbread. It is a different twist on the traditional yellow cornbread and will likely become a favorite of your family’s as well, especially if they like spicy food. You can choose to make your cornbread from scratch, but I chose to make it easy by opting for the pre-packaged yellow cornbread mix. Please leave a comment and let me know if you enjoyed it.
